Green pea pesto crostini with prosciutto

A delicious, colorful and easy way to enjoy a casual afternoon snacking!

Ingredients:

 

1 (8oz) bag of frozen peas, thawed

2 tablespoons of extra-virgin olive oil

12 slices of Multigrain toast

¼ cup part-skim ricotta cheese

½ ounce of every thinly sliced prosciutto, torn into 12 equal pieces

¼ teaspoon freshly ground pepper

 

Directions:

  • Combine green peas, basis, and olive oil in the bowl of a food processor; pulse 8 to 10 times or until the mixture is almost smooth.
  • Spread pea mixture evenly over toasts. Top each slice with 1-teaspoon ricotta cheese and 1 piece of prosciutto. Sprinkle evenly with black pepper.
  • Sit back, relax and enjoy! - Serves 6 (Serving size 2 crostini)

Corn & black bean salad

A refreshing treat for a hot summer day!

Ingredients:

 

3 cups of chopped iceberg lettuce

2 cans (8-3/4 oz. each) whole kernel corn, drained

1 can (15 oz. each) whole black beans, drained, rinsed

1 can (10 oz. each) diced Tomatoes with lime juice and cilantro, un-drained

2 tablespoons of canola oil

 

Directions:

  • Mix all ingredients in large bowl until combined.
  • Add your favorite shredded cheese to make this salad heartier.

 

Serves 6

  • Serve with any of our delicious Gilda crackers, breads or mini toasts, and you can select from a variety of great flavors including sesame, garlic, butter or original!

Cranberry and goat cheese canapés

The perfect snack to refresh and unwind after a long day at work …

Ingredients:

 

1 ½ cups fresh cranberries, chopped

3 tablespoons chopped fresh cilantro

3 tablespoons sugar

1 ½ tablespoons minced fresh jalapeño pepper

¾  teaspoon grated fresh ginger

Gilda’s mini toasts original flavor

1 (5.3-oz.) container spreadable goat cheese

Garnish: roasted, salted, and shelled pumpkin seeds

 

Tips: Make cranberry mixture 3 days ahead for ideal flavor!

 

Directions:

  • Stir together first 5 ingredients in a medium bowl. Let stand 10 minutes, stirring occasionally. Add salt and pepper to taste.
  • Spread each toast square with cheese, and top with a small spoonful of cranberry mixture.

 

Serving Tips:

  • Use Chavrie Original Mild Goat Cheese and
  • Serve with Gilda’s original flavor mini toasts

Bacon and cheese dip

A creamy and mouthwatering dip with crumbled and crunchy bacon…to die for!

Ingredients:

 

½ cup of sour cream

1 (4-oz.) package crumbled blue cheese

1 (3-oz.) package cream cheese, softened

2 tablespoons diced onion

1/8 teaspoon of your favorite hot sauce

4 bacon slices, cooked and crumbled

Garnishes: chopped fresh parsley, blue cheese crumbles

 

Directions:

  • Process first 5 ingredients in a blender or food processor until smooth.
  • Stir in half of the bacon.
  • Cover and chill 2 hours.
  • Let stand at room temperature 15 minutes before serving. Sprinkle the remaining bacon.

 

Serving tips:

Serve with a variety of our delicious Gilda crackers, breadsticks or toasts.  You can select from an assortment of flavors such as garlic, sesame, multigrain or whole wheat!

Pear, Brie and balsamic bruschetta

So sweet, savory, delicious and easy…!

Ingredients:

 

1 bag of Gilda’s regular bread (7.05 oz.)

3 ounces Brie cheese

1 ripe Bartlett pear

2 teaspoons of honey

2 teaspoons of balsamic vinegar

 

Directions:

  • Warm oven temperature to 400°. Arrange toasts on a baking sheet coated with cooking spray.  Divide Brie cheese over toasts; arrange on a jellyroll pan. Bake at 400° for 3 minutes. Slice pear into thin slices; fan 3 to 4 slices over each toast. Combine honey and balsamic vinegar in a bowl. Drizzle ½ teaspoon honey-balsamic mixture over each toast slice.
